1. Oatmeal Peanut Butter Cookies

Ingredients:
- 1/2 cup unsalted butter softened
- 1/2 cup packed brown sugar
- 1/3 cup white sugar
- 1/2 cup peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup quick oats
- 1/2 cup old-fashioned oats
Directions:
- Preheat oven to 350 F degrees
- Beat together butter, sugar, and peanut butter in large bowl
- Mix together the egg and vanilla
- Beat in the flour, baking soda, and salt with a mixer on low speed. Add the oats last
- Form dough into balls and place them 2 inches apart on lined cookie sheet
- Bake for 8-10 mins
2. Fluffernutter Cookies

Ingredients:
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup peanut butter
- 1/4 cup marshmallow fluff
- 1 egg
- 1/2 teaspoon Rodelle vanilla extract
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 1/4 cup peanut butter chips
- 1/2 cup mini marshmallows
Directions:
- Preheat oven to 350 F degrees
- Beat together butter, granulated sugar, and brown sugar
- Mix in peanut butter, marshmallow fluff, egg, and vanilla extract

Ingredients:
- 7 oz chopped dark chocolate
- 9 tbsp cubed unsalted butter
- 2 eggs
- 1/2 cup white sugar
- 1 cup and 1 tbsp plain gluten free flour blend (The Loopy Whisk clarifies they used a "store-bought blend of rice, potato, and maize flour with no added xanthan gum.")
- 1/4 tsp xanthan gum
- 3 tbsp cocoa powder
- 1 tsp baking powder
- 1 pinch of salt
- 6 - 8 tbsp smooth peanut butter
Directions:
- Preheat oven to 355 F degrees
- Using a heat-proof bowl above a pot of simmering water, melt chocolate and butter together
- Using a stand mixer or hand mixer with double beater attachment, mix eggs and sugar together for five to six minutes
- Mix in melted chocolate to the eggs and sugar
- Mix in gluten free flour, xanthan gum, cocoa powder, baking powder, and salt
- Place about 1 tbsp scoops of cookie batter onto lined baking sheet
- Spread each scoop out with spoon and place about 1/2 tbsp of peanut butter in each center
- Cover peanut butter with about 1 tbsp of the cookie batter so that the peanut butter is fully covered

4. Reese's Peanut Butter Cookies

Ingredients:
- 1 cup peanut butter
- 1/2 cup and 2 tbsp butter softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups chocolate chips and Reese's Pieces
Directions:
- Preheat oven to 375 F degrees
- Mix together peanut butter, butter, white sugar, and brown sugar with hand mixer
- Beat in egg, milk, and vanilla
- Mix flour, baking powder, and salt in separate bowl
- Mix in flour mixture to peanut butter mixture
- Mix in chocolate chips and Reese’s Pieces mixture (save some Reese’s for top of cookies)
- Place scoops of tbsp-sized dough onto parchment-lined cookie sheets
- Press extra Reese’s Pieces into tops of each cookie
- Bake for 8-10 minutes
5. Oreo Stuffed Peanut Butter Cookies

Ingredients:
- 2 cups peanut butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp baking soda
- 1 pinch salt
- 1 tsp vanilla extract
- 18-24 Peanut Butter Oreos
Directions:
- Preheat oven to 350 F degrees
- Stir peanut butter and sugar together by hand until smooth
- Mix in eggs one at a time
- Mix in baking soda, salt, and vanilla
- Scoop about 1-2 tbsp-sized dough and place on top of each Oreo
- Press dough around the cookie, so each is covered (be careful not to break the Oreos)
- Press fork dipped in flour into the top of the cookies with a criss-cross pattern
- Bake for 7-9 minutes
